Cooking typically involves the application of heat to food. But unlike conventional cooking technologies, such as gas and electric ranges, that involve generating substantial heat which is then transferred to the cooking vessel, induction cooking uses the cooking vessel as the original generator of the cooking heat. I could put you in a microwave, turn it on, and say "don't worry electromagnetic energy is all around you all the time".

Many in the market for a new stovetop shy away from induction cooktops because they think they will need to buy whole new sets of pots and pans.

But actually, that’s not entirely true: If the pots and pans you use for stovetop cooking are magnetic, then you can consider buying an induction stovetop without worrying. Here’s more about the magic of induction, and the science of how it works!

Regular stovetops heat pots and pans through contact. Flames or electrical heating elements of regular stovetops generate heat, and that heat is transferred through contact from the burner to the base of the pot in a process known as “thermal conduction.”

Induction cooktops, on the other hand, do not generate heat. Induction burners have a coiled wire just below the ceramic surface, which generates an oscillating magnetic field.

There are a few things to consider when selecting an induction cooker, including the amount of counter width you have and the type of power supply that you are working with. Other elements, such as unit features and design, should also be taken into consideration. To begin narrowing down your options, consider your space and needs.

Using a measuring tape, measure the space where you plan on placing your cooker. As soon as you determine how much counter space you have, you will be able to narrow down the many options available to you. While some cookers won't fit at all, others will fit your space precisely. Once you have taken accurate measurements, consider the type of power supply that you have inside of your home.

Methods of Cooking Food

Cooking is the application of heat to food to produce a meal for consumption. Although there are many means to generate heat to do this, the three more common methods of hob based heating used in our homes today are:

1) Chemical – This involves burning a variety of combustible materials such as coal, charcoal, wood or gas. The materials are ignited and the flame that is generated produces heat.

This heat is then transferred to the cooking vessel via the surrounding air.

2) Electrical – Running an electrical current through a resistance element also generates heat. Basic examples of this include electrical cooker coils and toasters.

Even the basic filament light bulb works using this process. Again, when heat is generated by the ring for cooking the heat is transferred to the cooking vessel or directly to the food via the excited molecules in the air.

An induction cooktop uses electricity to generate a rapidly changing magnetic field in coils below the cooking surface. When a ferromagnetic vessel (something with a lot of iron in it) is placed on the surface and the coil is energized, the magnetic field rapidly "sweeps" the iron-based cooking utensil. The quickly changing magnetic field will, by induction, cause electrical currents within the metal cooking pan, and these eddy currents will heat the pan quickly. (Don't worry about being electrocuted.) In general, iron-based materials are not efficient conductors of electricity; there is a fair amount of resistance in the metal. Electric current flowing through resistance creates heat, and the electrical energy is converted into thermal energy. If you suddenly have the idea that glass or ceramic cooking utensils won't work on this surface, you would be correct.

Induction cooking is very different from conventional gas or electric cooking. Due to the way that induction works, only certain types of pans will work on an induction cooktop or burner. How do you know if your cookware is compatible?

There are a few tricks that you can use to make sure you're buying the right cookware and whether your current pots and pans will work. There is even a way to make non-compatible pans work on your induction stove. But first, let's look at what makes induction cooking different from other stoves.

How Does Induction Cookware Work?

Induction cookers are a great example of electromagnetism in action.

Induction cookers exploit properties of pots made with some proportion of iron by heating the metal using a high frequency varying magnetic field. The frequency is tuned for the size of the pot, material and depth to penetrate the material.

The pots heat up because the changing magnetic field causes small electrical currents to be set up in the material of the pot. As the currents move in the material the molecules in the pot offer resistance to the current and heats up.

Magnetic materials in the pot such as iron can be made magnetic when a magnetic field is nearby. But the magnetic field from induction cookers is changing direction very rapidly. Changing the direction of the magnetic field means working to change the magnetic field of the pot, which causes the pot to heat up more.
